Lima based Peruvian chef Virgilio Martinez is one of the most innovative and thoughtful chefs of his generation. What I admire most about him is his search for authenticity and meaning in ancient Peruvian food traditions. Understanding those traditions is his way of more deeply connecting to his homeland. In this episode of CNNs Culinary Journeys, he travels to a remote town in the Peruvian Andes to learn about the importance and preparation of a traditional Andean potato dish. He creates his own version, incorporating something I think is integral to all art forms: an element of play. Bon appetit!
